**Warning: may induce drooling**
The Most Important Meal of the Day
We KNOW we’re not alone in saying that breakfast is easily our favorite meal of the day! The team at HQ literally can’t get the day started without it, and we’re ALWAYS looking for new and different things to make. Finding recipes that are quick, tasty AND easy on the wallet is SUPER important to us. This one ⬇ is by far one of our favorites - the best part? It’s adult and kid approved ✔️
Sheet Pan Pancakes
- 2 cups of your favorite dry pancake mix - you can make this from scratch, or use premixed dry pancake mix from the grocery store, which only costs about $3.00
- 1.5 cups of low fat milk (almond or soy milk works great, and only cost about $3.50 for a small container!)
- 2 tablespoons melted butter - $2.00
- Two large eggs - $0.70
- Topping of choice: we used bacon to add a little protein, but it’s delicious with fresh fruit like blueberries and strawberries, which are available for $3 at your local farm market!
- Pure maple syrup - $5.00
Total Price: $16.20 - feeds four to five people
Preheat your oven to 425 degrees.
In a large bowl, add in your dry pancake mix, eggs, milk and melted butter. Using a whisk, mix all ingredients together until almost smooth. You want to be sure you leave a few lumps in the batter!
Spray a large sheet pan with nonstick cooking spray. Add in your pancake mixture and smooth it out evenly across the pan. Now, add your toppings! Set your fruit or topping of choice on top, and pop it in the oven. Bake for 15 minutes or until golden brown. Once it’s out and cooled, cut it into squares using a pizza cutter. Serve alongside some turkey sausage, and top with pure maple syrup. SO YUMMY 🥞
Let’s Lunch
This is one of our favorite recipes of ALL TIME!! It’s quick, cheap and SO TASTY 😍
Chicken And Avocado Greek Salad
- One Boneless Skinless Chicken Breast - $5.00
- One avocado - $1.25
- One small field cucumber - $0.98
- One small field tomato - $0.79
- One small red onion - $1.50
- Feta Cheese - small packs are about $3.00
- Low calorie greek feta salad dressing (brand of choice - about $3.00)
Total Price: $15.17 - feeds two to three people
This one couldn’t be easier to make! Using a sharp knife, cut your chicken breast into 1 inch by 1 inch cubes. While you’re doing that, have your skillet heating over medium heat with about 1 tablespoon of oil of your choice. Add the cubed chicken into the skillet, and season with salt, pepper and garlic powder to taste. Cook your chicken until browned and cooked through, and set aside to cool.
Time to chop your veggies! Cut your cucumber, tomato and into chunks. The red onion should be chopped slightly smaller than the other vegetables, so as to not be overpowering. Open your avocado, and run your spoon along each side of it to remove from the rind. Slice it both lengthwise and widthwise to create small cubes.
In a large bowl, add your chopped vegetables, chicken and feta cheese (add as much or as little as you would like!) - give it a good stir! After that, add in about ¼ cup of your low calorie dressing and give it another good stir. Serve in bowls, an ENJOY! It’s the perfect summer salad! 🥗
Dinner of Champions
We’re on a roll guys - let’s keep the health train rolling and finish strong with our supper! This one is awesome, and so easy to make!
Pork Stir Fry
- 1.5 cups of frozen vegetables of choice - we like the “stir fry” mix which typically includes broccoli, onion and carrot or baby corn - $2.50
- 2 boneless pork tenderloin chops - $4.00
- 1 cup of long grain rice - $1.50
- 2 tablespoons of sesame oil - $2.00
- 2 tablespoons of low sodium soy sauce - $1.00
- 1 tsp of ground ginger - $0.50
Total Price: $11.50 - feeds four people
Start by slicing the pork chops. You want them to be sliced as thin as possible, this makes for a quicker cook time and allows there to be a little pork in every bite!
Prep your rice as per the instructions on the bag, and have that cooking while you’re preparing everything else.
Heat your skillet over medium heat with your sesame oil in it. Once the pan is nice and hot, add in your sliced pork. Season with salt, pepper and garlic powder to taste, and add in your ginger. Feel free to add in any other spices you like here, as well! Once the pork is starting to cook, add in your frozen vegetables and sauté all together.
Add in your rice, and your soy sauce and fry everything together for about 2 minutes. Turn down the heat, and simmer for about 10 minutes. Serve in bowls, and garnish hot sauce of your choice (sriracha is SO GOOD!) - or eat as is if spicy isn’t your thing!
There you have it, folks! You’ve just fed your entire family, for the whole day, for roughly $40! Sometimes, we shy away from eating healthy or cooking meals for ourselves because we think it’s cheaper and/or easier to just get that takeout or pop that frozen pizza in the oven. There IS a way to live both healthily, and frugally, while still enjoying your food! Don’t forget, when taking the Boombod 7 Day Challenge - it’s extra important to eat healthy, high fibre meals 30 minutes after each shot!
